Easter cupcakes


Easter is here and for me that means a lot of Easter treats. Those treats usually contain chocolate and a lot of sprinkles.

Easter reminds me also of spring and spring is for me a big ball with pastel colors. I really like spring time. It's just so colorful and happy and everyone is in a good mood. The only thing I hate about spring is that I get hay fever and that can get annoying sometimes.

But what I really wanted to show you is a new recipe for some Easter cupcakes. And that means that it is really easy to make and everyone can do it.



This recipe is based on another one I've already made before.

You'll need...

...115g butter
...vanilla bean
...400g sugar
...3 eggs
...3dl milk
...2tsp baking powder
...400g flour

Preheat the oven to 200° C.

Melt the butter in a pot and add the vanilla bean while the butter is warm. Let this sit for about 2 minutes and then put the mixture and the sugar in a bowl. Mix this together and then add the eggs and the milk. When this is mixed add the baking powder and flour. Blend the flour not to long otherwise the muffins won't go up.

Take half of the dough and color it in pink and the other half in purple. I just put the dough in a piping  bag so I could control it a bit better.

 Layer the dough on top of each other ► purple-pink-purple-pink


Take a skewer and go in circular motions to make a marble effect. Don't mix to much because you don't want the colors to blend.



Bake those muffins for 20 minutes ☻



On top I used creme cheese frosting...

...400g cream cheese (Philadelphia)
...1cup icing sugar (powdered sugar)
...1tsp vanilla extract

Mix this together and put in in the fridge. 

Decorations...

...1cup candy melts (white)
...little bit of pink food coloring

Melt the candy melts in the microwave and color them in. I used a tiny amount of food coloring so it gets a creme color. Put it in a piping bag and cut of a tiny bit so the tip is very thin. 

Take some wax paper so the chocolate won't stick. I used a bunny template so every bunny looks the same. 




I made some eggs too.


Let this set for an hour and then you can remove it. 

If the muffins are cooled down you can put the icing on top and then add the chocolate decor.
