Rainbow Cupcakes

It's cheat day. Once in a while you need to treat yourself with some sugar...yeah I know it not that healthy but for now it alright :)

Today I want to show you how I made these delicious cupcakes. I used a recipe from pinterest. At the end of the blogpost theres a link to the recipe. The icing I made myself but I used the rest of the recipe.

Here's what you need:
1 cup butter, softened
2 1/3 cups sugar
5 egg whites
1 tablespoon vanilla
3 cups flour
4 teaspoons baking powder
1/2 tsp salt
1 1/2 cups milk
food colouring 

400g cream cheese
200g powdered sugar
2 tsp vanilla


When your done with your batter divide it in six bowls and mix it with the food colouring in all of the different colours of the rainbow. After you've done that just stack the colours on top of each other like this:


Bake the cupcakes for 20 minutes at 170° C and let them cool down. 

To make the icing just mix all the ingredients (cream cheese, powdered sugar & vanilla) together and put it in a piping bag. Pipe the icing on top of the cupcakes. You can also just put it on top with a spoon. That would work too. I spread the icing with a knife. For the final touch I added some rainbow sprinkles. I thought it might look nicer like this than just plane white. 




A few tips:
  • use vibrant colours
  • use white cupcake liners so you can see the actual colours just by looking at them
  • let the cupcakes fully cool before you put the icing on top
